Les Soeurs Macarons’ Origin Story: Founded by sisters Rachel Louie and her sibling, the bakery began in 2016 after Rachel fell in love with macarons while living in Japan and decided to bring that passion to Australia.

Passion Meets Craftsmanship: Rachel combines her love for baking and aesthetics by creating beautifully crafted macarons and cakes, often incorporating fresh blooms to elevate the presentation and overall customer experience.

Balancing Baking and Life: Starting as a side project while working full-time as a teacher, Rachel gradually transitioned her focus to baking, studying Patisserie, and growing the business in Sydney’s Balmain East.

We recently discovered a charming little bakery that makes cupcakes, cookies and, of course, macarons along with many other sweet treats in Balmain East in NSW. We introduced ourselves to co-owner Rachel Louie to find out more about the little treasure that is Les Soeurs Macarons.

I started Les Soeurs Macarons in 2016 with my sister in Brisbane, she began when we asked her about the humble beginnings of the business. I lived in Japan in 2010 and came across a macaron for the first time. It was the most delicate and delicious sweet I've had. Came back to Australia and it wasn't a big hit then.

So, I decided to give it a go making some myself. And that's how my journey started with LSM. It's been an eventful 6 years in Brisbane baking on the side along with my full-time job as a high school teacher. Now I've relocated to Sydney to study Patisserie full time and pursue my baking passion.

We then asked her what she loves about the business. I love that I can create something out of basic ingredients, into something I find pretty, she enthused. I love macarons, cakes and fresh blooms. Working with these components really makes me happy, and even more happy when I see my customers living the outcome - Visually and the taste!
